Actually, there wouldn't be any fat zombies. Since they are the slowest humans, they will be picked off first. And the zombies won't just bite them and be done, they will devour that delicious fat that's been accumulating throughout the humans pathetic life.
Of course, there will be some exceptions where the fat person may have been traveling in a group and the group defended the fatty but not without injury thus infecting them. But if the group was intelligent they would have killed the fatty right then and there, but then again, if they decided to evade the zombie apocalypse with a fatty in tow they must not be very intelligent to begin with. So the fatty will then turn into a zombie eventually. And since the muscle use is decreased dramatically, the fat zombie will most likely have to resort to crawling around since his legs won't be able to support that tub of lard it's carrying around. This is, of course, only the case with the generic "slow" zombies. The newer 'faster' zombies might cause a bit more of a problem. But like I said earlier, since the group was stupid to begin with, they will all most likely succumb to the zombies attacking them. Then dinner is served!
